Sweet & Sour Meatballs

SWEET & SOUR MEATBALLS

Ingredients:

1 lb ground beef
1 tsp salt
1 tsp onion, minced
1/4 cup dry bread crumbs
1 egg, slightly beaten
1 can (1 lb) pineapple chunks, frained
sweet and sour sauce






Directions:

1. Mix first five ingredients, 1/3 cup water and 1/2 cup pineapple chunks (cut up).
2. Shape into meatballs.
3. Bring sauce to a boil.
4. Add meatballs and remaining pineapple.
5. Simmer covered for 25 minutes or until done.
6. Serve hot. Makes 40-50 meatballs.

Sweet & Sour Sauce:
In large skillet, mix 2/3 cup ketchup, 2/3 cup cider vinegar and 1/3 cup packed brown sugar.

Tuna Casserole

TUNA CASSEROLE

Ingredients:

3 cups medium noodles
1 can tuna, drained
1/2 cup miracle whip
1 cup sliced celery
1/3 cup onion, chopped
1/4 cup green pepper, diced
1 tsp salt
1 can cream of celery soup
1/2 cup milk
1 cup shredded sharp cheese
1/2 cup almonds, slivered, bleached and toasted





Directions:

1. Cook noodles in boiling salted water until tender; drain.
2. Combine noodles, tuna, miracle whip, vegetables and salt.
3. Blend together soup plus milk; heat thoroughly.
4. Add cheese; heat and stir until cheese melts. Add to noodle mixture.
5. Turn into ungreased casserole dish.
6. Sprinkle with toasted almonds.
7. Bake at 425 degrees for 20 minutes or until bubble.

Tamale Pie

TAMALE PIE

Ingredients:

2 lb ground beef
1 large onion, chopped
2 small cans tomato sauce
1 package chili seasoning
1/2 green pepper, chopped
2 cans sliced olives
1 can Niblets
1 can chili with beans
1/2 lb grated cheese
1 package corn tortillas cut in 1-inch squares

Directions:

1. Brown hamburger and onion, and drain.
2. Add remaining ingredients except for cheese and a few olives--use these as a topping.
3. Put all together in a 9 x 13 pan.
4. Bake at 350 degrees for 30 minutes.

French Onion Soup

FRENCH ONION SOUP

Ingredients:

8 cups sliced yellow onions
4 cans Swanson's beef broth
1/2 cube butter
1 can water











Directions:

1. On medium heat, saute onions in butter until transparent and golden.
2. Add broth and water.
3. Cover and simmer on low for 3 hours, adding water as necessary.
4. Dish into over-safe bowls.
5. Top with french bread cut into cubes.
6. Sprinkle with grated swiss cheese.
7. Broil in oven until cheese is bubbly.

Serves 4 people.

Stuffed Peppers

STUFFED PEPPERS

Ingredients:

ground beef
1/4 cup chopped onions
1 cup cooked rice
1/2 tsp dried basil
15 oz. can tomato sauce
1 Tbsp Worcestershire sauce
1/2 tsp salt
1/2 cup shredded cheese








Directions:

1. Cook rice for 20 min.
2. Wash and clean bell peppers.
3. Chop up pepper tops.
4. Put peppers in pan of 1 inch water and boil hole-down.
5. Cover pan and simmer 5 minutes; drain on paper towel.
6. Sautee 1 Tbsp cooking oil, chopped onion and green pepper (med heat)
7. Add ground beef, tomato sauce, cooked rice, Worcestershire sauce, salt and basil.
8. Stir and heat until it boils.
9. Spoon into bell peppes.
10. Cover peppers with remaining tomato sauce.
11. Cover with foil.
12. Bake at 350 degrees for 30 minutes.
13. Take off foil and top with cheese.
14. Bake at 350 degrees for 10 minutes.

Dutch Zucchini Casserole

DUTCH ZUCCHINI CASSEROLE

Ingredients:

2 cups egg noodles
4 cups diced zucchinis
1/2 cup water
1/4 cup butter
1 1/2 cup mushroom
1/2 cup onion
1 clove garlic
1/4 cup flour
3/4 tsp salt
3/4 tsp basil
1 1/2 cup milk
1 1/2 cup Gouda cheese

Directions:

1. Cook noodles.
2. Cook zucchini in microwave for six minutes.
3. Sautee mushroom, onion and garlic in butter.
4. Add flour, salt, basil and milk.
5. Stir until thickened.
6. Mix all together.
7. Bake at 350 degrees for 30 minutes.

Thai Noodles & Peanut Butter Sauce

THAI NOODLES & PEANUT BUTTER SAUCE

Ingredients:

2 3-oz packages of Oriental Ramen
2 cups frozen veggies
1/8 to 1/4 cup red pepper
1/3 cup hot water
1/4 cup peanut butter
1 tsp sugar







Directions:

1. Reserve seasoning packets for ramen.
2. Bring 4 cups of water to a boil.
3. Add noodles and veggies.
4. Cook three minutes and drain.
5. Whisk together hot water, peanut butter, sugar, red pepper and seasoning packages.
6. Add to noodles.

Broccoli Pasta

BROCCOLI PASTA

Ingredients:

1 cup cream
1/2 cup butter
1/2 cup parmesan
1 cup parsley
1 tsp salt
1/4 tsp pepper
1/8 tsp garlic powder
broccoli





Directions:

1. Cook pasta.
2. Melt cream and butter over medium heat.
3. Combine ingredients and pour over cooked pasta.
4. Allow to sit for a few minutes to thicken.

Greek Pasta Salad

GREEK PASTA SALAD

Ingredients:

1/2 lb package of macaroni
2 medium tomatoes, chopped
1 medium cucumber, chopped
1/2 cup chopped green onions
1/2 cup sliced ripe olives
4 oz. crumbled feta cheese
1 tsp dried oregano
1/4 tsp garlic powder
1/4 tsp pepper
Italian salad dressing




Directions:
1. Cook pasta. Let cool.
2. Combine all ingredients.

Taco Soup

TACO SOUP

Ingredients:

2 cups refried beans
2 cups chicken broth
1 lb. hamburger
chili powder
1 cup stewed tomato puree
avacado
1/4 cup sour cream
salsa
salt
garlic




Directions:

1. Brown hamburger meat.
2. Combine ingredients and let simmer.
3. Add tortilla chips and cheese.

Stuffed Crescent Rolls

STUFFED CRESCENT ROLLS

Ingredients:

2 cups cooked, chopped chicken
1 cup sauteed mushrooms
sliced almonds
green onions, chopped
8 oz. cream cheese
2 Grand Crescent Rolls packages








Directions:

1. Unroll 2 packages of rolls.
2. Combine chicken, mushrooms, almonds, green onion and cream cheese.
3. Fill each triangle with filling and fold sides to cover filling.
4. Bake at 350 degrees for 20-25 minutes.
5. Variation: Can make a sauce of cream of chicken soup and milk. Pour over rolls.

Cheese Enchiladas

CHEESE ENCHILADAS

Ingredients:

1/2 onion, chopped
2 cloves garlic, crushed
2 Tbsp oil
1/2 4 oz. can green chiles
1 lb. can tomatoes, chopped
1 cup tomato juice
1/4 tsp oregano
1/2 tsp basil
1 1/2 Tbsp cornstarch
8 tortillas
green onions
grated cheese
sliced olives




Directions:

1. Sautee onions and garlic in the oil.
2. Add chiles, tomatoes, tomato juice, oregano, basil.
3. Simmer for 20 minutes.
4. Add cornstarch.
5. Simmer for 10 minutes.
6. Put tortillas in sauce, fill with grated cheese & green onion.
7. Roll up and place in casserole dish.
8. Top with rest of sauce, more cheese and sliced olives.
9. Bake at 350 degrees for 30 minutes. Serves 8 people.

Beef Stroganoff

BEEF STROGANOFF

Ingredients:

1 lb beef sirloin
3 Tbsp flour
1/2 tsp salt
1/4 tsp pepper
1 clove garlic, minced
1/4 cup butter, melted
1/2 cup chopped onion
1/4 cup water
1 can cream of chicken soup
1 4-oz. can sliced mushrooms (or slice & sautee fresh ones)
1 cup sour cream




Directions:

1. Put flour, salt & pepper in a bag and shake sliced beef sirloin in it.
2. Brown meat in melted butter and garlic.
3. Add onions. Sautee until golden brown.
4. Add water and stir until brownings are dissolved.
5. Add soup. Cook until well done--about one hour.
6. Add mushrooms and sour cream just before serving, allowing enough time to heat through.
7. Serve over rice or noodles.

Chicken Broccoli Casserole


CHICKEN BROCCOLI CASSEROLE

Ingredients:

2 cans of cream of chicken soup
2 cups cheese
1 cup sour cream
1 scoop miracle whip
1 tsp curry
1 Tbsp lemon juice
1 lb. of broccoli --thawed
2 chicken breasts
3-4 cups rice

Directions:

1. Cook rice & chicken.
2. Slice chicken and set aside.
3. Combine and heat soup, sour cream, miracle whip, curry, and lemon juice.
4. Add broccoli and sliced chicken.
5. Put rice in 9 x 13 pan.
6. Pour mixture over rice and cover with shredded cheese.
7. Bake at 350 degrees for 1 hour.

Cottage Cheese Casserole

COTTAGE CHEESE CASSEROLE

Ingredients:

12 oz. bowtie pasta
4 cups spaghetti sauce
16 oz. cottage cheese
8 oz. sour cream
1 package frozen chopped spinach (thawed and squeezed)
3/4 cups chopped green onions
1 tsp salt
1/2 tsp pepper
2 cups cheddar cheese (shredded)

Directions:

1. Cook pasta --omit salt & undercook by 2 minutes. (Drain).
2. Mix pasta, sauce, cottage cheese, sour cream, spinach, green onions, salt & pepper in bowl. Spoon into dish.
3. Top with shredded cheese.
4.  Cover with buttered foil.
5. Bake covered at 375 degrees for 35 minutes.
6. Uncover, bake for 20 more minutes.

Sausage Casserole

SAUSAGE CASSEROLE

Ingredients:

1 lb. sausage
1 large onion, chopped
1 bunch celery, chopped
2 packages Lipton's chicken noodle soup
1 cup white rice

Directions:

1. Brown sausage.
2. Add onion and celery.
3. Drain off fat.
4. Add packages of Lipton's soup and 3 cups of water.
5. Cook 7 minutes.
6. Add 1 cup of white rice.
7. Add meat.
8. Bake at 350 degrees for 1 hour.

Spaghetti Casserole

SPAGHETTI CASSEROLE

Ingredients:

6 oz. cooked spaghetti
2 eggs
1/2 cup parmesan
1 cup cottage cheese spread
1/4 cup green pepper
1/2 cup onion
1 lb. ground beef
jar spaghetti sauce

Directions:

1. Mix all together.
2. Bake at 350 degrees for 30 minutes.

Italian Beef Fontina Sandwich

ITALIAN BEEF FONTINA SANDWICH (Crockpot)

Ingredients:

Salt
Pepper
Oil
Red peppers (bottled)
Pepperoncini slices (bottled)
1/2 Onion
Italian seasoning
Beef broth
Beef (as much as you'd like)




Directions:

1. Salt and pepper beef, and then sear it in oil for 3-5 minutes on each side.
2. Put into crockpot.
3. Chop red peppers and add to the meat.
4. Pout some of the liquid from the red pepper bottled into the crockpot (1-2 Tbsp)
5. Add 1/2 jar of pepperoncini slices with 1-2 Tbsp of the liquid.
6. Slice the onion and add to the crockpot.
7. Sprinkle with Italian seasoning (to taste).
8. Pour in beef broth to come up about 2/3 of the beef.
9. Put crockpot on LOW for 7-8 hours.
10. Shred beef.
11. Put shredded beef on bread (preferably homemade) and put on a slice of Fontina cheese. (Or Havarti cheese, because Fontina is really expensive).

I use the Artisan Bread recipe when I make this recipe. Homemade bread is just SO much tastier.

Baked Chicken & Rice

CHICKEN & RICE

Ingredients:

1 cup rice
1 envelope of onion soup mix
small chicken pieces (as many as needed)
paprika
salt
1 can cream of mushroom (or cream of chicken)
3 cans of water

Directions:

1. Grease 9 x 13 pan.
2. Sprinkle 1 cup raw rice in bottom of pan.
3. Sprinkle 1 envelope of onion soup mix over rice
4. Add raw chicken pieces.
5. Sprinkle with paprika & salt.
6. Pour 1 can of cream of mushroom soup + 3 cans of water over the chicken.
7. Bake at 350 degrees for 1 to 1 1/2 hours.

Best Ever Meatloaf

MEATLOAF

Ingredients:

ground beef
eggs
Worcestershire sauce
ketchup
small onion
6 cups corn flakes
1/4 cup butter (1/2 stick)
shredded cheese

Directions:

1. For each lb of meat, add 1 egg, 1 dash of Worcestershire sauce, 1 cup ketchup and an onion. (So if you have 2.5 lbs of ground beef, at 2 eggs, 2.5 dashes, 2.5 cups and 2 onions.. etc).
2. Mix the it all together. Put it into a greased 9 x 13 pan.
3. Mix 6 cups cornflakes with melted butter.
4. Cover meat mixture with cornflakes and shredded cheese (amount is variable to taste).
5. Bake at 350 degrees for 45 minutes to an hour.
