FRUIT SALAD
Ingredients:
1 cup pineapple (cubed)
1 cup coconut
1 cup small marshmallows
1 cup sour cream
1/2 cup mandarin oranges
1/2 cup cherries
1/2 cup pecans
Directions:
1. Mix all together.
2. And let stand overnight.

Rainbow Jello
RAINBOW JELLO
Ingredients:
6 packages of jello (3 oz size):
lime (top layer)
lemon
orange
strawberry
cherry
black cherry (bottom layer)
1/3 cup sour cream for each package of jello.
Directions:
1. Make each package of jello (one at a time) with 1 1/4 cup boiling water.
2. Divide unset jello in half (3/4 cup).
3. In one half, put 1/3 cup sour cream.
4. In the other, add 3 Tbsp cold water just before adding it as a layer.
5. Start with the sour cream layers.

Cheese Ball
CHEESE BALL

Ingredients:
2 8-oz packages of cream cheese
1 small bottle of Old English Sharp cheese
1 oz. blue cheese
3 sm green onions (finely chopped)
2 shots of Worcestershire sauce
sliced pecans
Directions:
1. Soften cheese and mix then together.
2. Add the green onions, Worchestershire sauce.
3. Tear off large piece of saran wrap. Put on counter top.
4. Put cup of sliced (not slivered) pecans on top of the saran wrap.
5. Take half of the cheese mixture and put it on top of the mound of pecans.
6. Use the saran wrap to move the pecans around the cheese until it has formed a ball that is covered on every side with the pecans.

My Favorite Salsa

8 Roma tomatoes
1 purple onion
2 green peppers
1 can black beans
1 can blackeyed peas
10 oz. frozen corn (defrosted)
juice of 2 limes
8 oz bottle Fat free Italian Dressing
1 bunch cilantro (chopped fine)
pinch of salt
pinch of pepper
pinch of cumin (optional)
Directions:
Chop and drain all ingredients and add together. Mix in whole bottle of Italian Dressing. Enjoy!

Ingredients:
Directions:
1/2 jalapeno pepper - chopped
1 large onion - chopped
1 bunch cilantro - chopped
2 cloves garlic - chopped
4 cups crushed tomato (canned)
cumin
garlic salt
pepper
Directions:
Blend it all together in a blender.
Be aware that the longer it sits in the fridge, the hotter the salsa gets. So over the course of two weeks, you'll have some pretty hot salsa. YUM.
Easy Quiche
IMPOSSIBLE QUICHE
Ingredients:
1 cup shredded cheese (jack, mozzarella)
2 cups frozen or fresh veggies (spinach, broccoli) slightly cooked
1/4 cup sauteed onion, chopped
1/4 cup sauteed mushrooms, sliced (or canned)
1 cup milk
2 eggs
1/2 cup Bisquick
Directions:
1. Greast 9" pie pan.
2. Put veggies and cheese in pan.
3. Mix milk, eggs, and Bisquick.
4. Pour over veggies.
5. Bake at 400 degrees for 30-35 minutes.
