ITALIAN BEEF FONTINA SANDWICH (Crockpot)

Ingredients:
Salt
Pepper
Oil
Red peppers (bottled)
Pepperoncini slices (bottled)
1/2 Onion
Italian seasoning
Beef broth
Beef (as much as you'd like)
Directions:
1. Salt and pepper beef, and then sear it in oil for 3-5 minutes on each side.
2. Put into crockpot.
3. Chop red peppers and add to the meat.
4. Pout some of the liquid from the red pepper bottled into the crockpot (1-2 Tbsp)
5. Add 1/2 jar of pepperoncini slices with 1-2 Tbsp of the liquid.
6. Slice the onion and add to the crockpot.
7. Sprinkle with Italian seasoning (to taste).
8. Pour in beef broth to come up about 2/3 of the beef.
9. Put crockpot on LOW for 7-8 hours.
10. Shred beef.
11. Put shredded beef on bread (preferably homemade) and put on a slice of Fontina cheese. (Or Havarti cheese, because Fontina is really expensive).
I use the Artisan Bread recipe when I make this recipe. Homemade bread is just SO much tastier.

Crockpot Mac & Cheese
CROCKPOT MAC & CHEESE
Ingredients:
1/2 lb elbow macaroni
4 cups shredded cheddar cheese (or whatever cheese you'd like to use)
1 12 fl oz can evaporated milk
1 1/2 cup milk
2 eggs
1 tsp salt
1/2 tsp pepper
Directions:
1. Mix together eggs and both milks.
2. Add macaroni (uncooked) & three cups cheese & seasonings.
3. Put in crockpot.
4. Sprinkle remaining one cup cheese.
5. Put crockpot on LOW and let cook for 5-6 hours.
