California Fruit Salad

FRUIT SALAD

Ingredients:

1 cup pineapple (cubed)
1 cup coconut
1 cup small marshmallows
1 cup sour cream
1/2 cup mandarin oranges
1/2 cup cherries
1/2 cup pecans

Directions:

1. Mix all together.
2. And let stand overnight.

Greek Pasta Salad

GREEK PASTA SALAD

Ingredients:

1/2 lb package of macaroni
2 medium tomatoes, chopped
1 medium cucumber, chopped
1/2 cup chopped green onions
1/2 cup sliced ripe olives
4 oz. crumbled feta cheese
1 tsp dried oregano
1/4 tsp garlic powder
1/4 tsp pepper
Italian salad dressing




Directions:
1. Cook pasta. Let cool.
2. Combine all ingredients.

Pink Salad

PINK SALAD

Ingredients:

1 small can pineapple tidbits
1 12 oz. cool whip
1 3 oz box red jello (dry)
1 1 lb. 8 oz. cottage cheese

Directions:

1. Drain pineapple.
2. Mix all ingredients in large bowl. Be sure to mix well, but do not beat.

Strawberry Spinach Salad

STRAWBERRY SPINACH SALAD

Ingredients:

1 package spring salad mix
1 package baby spinach
1/2 cup craisins
1 bag slivered almonds, carmelized*
1 pint of strawberries, halved

1/2 cup sugar
1/4 cup oil
1/2 cup lemon juice
1 tsp Dijon mustard

Directions:

1.*To carmelize, Put almonds & 4 Tbsp of sugar in a frying pan. Cook over medium heat, stirring occasionally until carmelized (4-5 minutes).
3. For dressing, mix together the sugar, oil, lemon juice and Dijon mustard.
2. Put dressing on just before serving. Use only half of the dressing.
