RICE PUDDING

Ingredients:
2 cups milk
2/3 cup cream or evaporated milk
2 cups cold (and cooked) rice
1/2 cup sugar
1/4 tsp salt
1 Tbsp cornstarch
2 eggs, beaten
1/8 tsp ground cinnamon
1/8 tsp ground nutmeg
1 tsp vanilla
Directions:
1. In a medium saucepan, add cornstarch, sugar and salt.
2. Whisk in cold milk and cream.
3. Cook over medium heat until mixture begins to boil.
4. Add the rice. Cook, stirring constantly.
5. Beat eggs in separate bowl.
6. When rice mixture begins to boil, slowly add a spoonful at a time to the beaten eggs.
7. Add half the rice mixture to the beaten eggs, whisking constantly. (If you put the beaten eggs directly into the hot rice mixture, they will scramble. You have to slowly introduce them to the heat. Whisking constantly cools the mixture down as it is mixing the eggs into the rice mixture).
8. Slowly return egg mixture back into the remaining rice mixture.
9. Turn heat to low and continue cooking, without boiling, until thick and creamy.
10. Remove pan from the heat and add cinnamon, nutmeg and vanilla. Stir until combined.
11. Serve warm or cold. Makes 8 half-cup servings.
