HOMEMADE ROLLS
Ingredients:
2 Tbsp yeast
1/4 cup warm water
1/2 cup shortening
1/2 cup sugar
3 eggs (well beaten)
1 cup warm water
4 1/2 cups flour
2 tsp salt
Directions:
1. Soften yeast in 1/4 cup warm water.
2. In large bowl, combine shortening, sugar, eggs, 1 cup warm water and salt.
3. Stir in yeast and 2 1/2 cups of flour.
4. Beat with mixer until smooth and well mixed.
5. Add remaining flour to make dough soft.
6. Cover.
7. Allow to rise in warm place until doubled (about 1 to 1 1/2 hours).
8. Punch down & refrigerate overnight.
9. Let rise again for about 3 hours.
10. Divide dough in half and roll out each portion separately on a lightly floured board.
11. Shape to a 1/2-inch thick rectangle.
12. Spread rolled-out dough with softened butter.
13. Roll up like cinnamon rolls.
14. Cut into 1 inch slices.
15. Put in greased muffin tins (cut-side down).
16. Cover and let rise three hours before baking.
17. Bake at 400 degrees for 10 minutes or until light brown.
18. Rub tops of rolls with butter when out of the oven.
